Jews always count both the first and last days when they are counting days.
So, for example, when scriptures say Jesus rose on the third day, or three days later, they are counting Friday as first, Saturday as second, and Sunday is indeed the third day.
Similarly, the eighth day from Sunday is also Sunday, since they count both Sundays.
